The three that work reliably

A basic sauerkraut using just cabbage and salt, weighted down so the vegetables stay fully submerged under the brine — this was the actual fix for the mould problem, not the ingredients. A quick-pickle style ferment for carrots and cucumber, ready within about five days. A simple ginger-and-honey fermented drink that needs almost no monitoring.

The rule that prevents mould

Everything solid must stay under the liquid, always. A fermentation weight, a clean stone, or even a smaller jar filled with water pressed on top all work. This one detail solved every mould problem we'd had.

Beyond that: clean equipment, non-iodised salt, and patience — most beginner failures come from rushing the submersion step, not from the recipe itself.
