Storing vegetables without plastic: what kept longest in our fridge

We tracked eleven vegetables across four storage methods for six weeks. Damp cloth won more often than we expected.

Plastic bags keep vegetables alive because they hold humidity. Any replacement has to do the same job, so we tested four alternatives across eleven vegetables for six weeks, checking each every second day.

The four methods

A damp cotton cloth wrapped loosely around leafy greens outperformed everything else, adding roughly four days of usable life. A sealed glass container was second, though it needed opening every couple of days to release condensation. Beeswax wraps were fine for cut vegetables and poor for whole leaves. Loose in the drawer was, predictably, the worst.

  • Carrots and celery in a jar of water, refreshed twice a week
  • Leafy greens in a damp cloth, in the crisper drawer
  • Herbs stem-down in water, covered loosely

Nothing here needs buying. A tea towel and a jar covered nine of the eleven vegetables we tested, which is why we stopped recommending specialised storage products entirely.
